Ingredients

  • 200g feta cheese, crumbled
  • 1 cup baby spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)
  • Crusty bread for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drizzle olive oil evenly in a large oven-safe skillet or baking dish.
  3. Spread crumbled feta, chopped spinach, and halved cherry tomatoes evenly in the dish.
  4. Crack the eggs over the mixture, spacing them evenly.
  5. Season with salt, pepper, and dried oregano.
  6. Bake for 12-15 minutes, or until the egg whites are set but the yolks remain slightly runny.
  7. Remove from the oven, let cool for a minute, and garnish with fresh basil if desired.
