Instructions
- Prepare the Steak: Remove the rib-eye steak from its packaging, pat it dry with paper towels, and place it on a plate. Refrigerate uncovered for 2 hours to dry out the surface.
- Heat the Skillet: Preheat a heavy skillet over medium-high heat until very hot.
- Season and Sear: Generously season the steak with salt and freshly ground pepper. Trim excess fat and place the steak fat-side down in the skillet. Sear until the fat browns, about 2 minutes. Flip the steak and sear the other side for 2 minutes.
- Butter-Basting: Add the butter to the skillet. As it melts and begins to brown, spoon it over the steak continuously for about 2 minutes.
- Rest the Steak: Remove the steak from the skillet, place it on a plate, and tent it loosely with foil. Let it rest for 7 minutes to allow the juices to redistribute.
