- 6 bone-in, skin-on chicken thighs (4–6 ounces each)
- 1 1/4 teaspoons kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 1/2 cups fresh or frozen cranberries
- 1 1/2 teaspoons orange zest
- 2/3 cup orange juice
- 1/4 cup maple syrup
- 1 teaspoon minced garlic
- 1 1/2 teaspoons fresh rosemary leaves, minced
- Optional: rosemary sprigs and orange slices for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken thighs dry with a paper towel and season both sides with salt and pepper.
- Heat a cast-iron skillet or oven-safe pan over medium-high heat and add olive oil.
- Place the chicken thighs in the skillet, skin side down, and sear for about 5 minutes per side until golden brown.
- In a mixing bowl, combine cranberries, orange zest, orange juice, maple syrup, minced garlic, and chopped rosemary.
- Pour the cranberry mixture over the chicken thighs in the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is fully cooked and the cranberries burst.
- Spoon the cranberry sauce over the chicken thighs before serving. Garnish with rosemary sprigs and orange slices if desired.
